Spinach and Feta Protein Muffins

1 egg

200ml milk

2 Tbsp olive or flax oil

¼cup cooked spinach, drained well

½cup cottage cheese

¼cup crumbled feta

2 Tbsp chopped fresh herbs (chives, parsley, and thyme)

½cup wholemeal flour

½cup plain flour

1 scoop Just Natural Clean Lean Protein

1 scoop Good Green Stuff

4 tsp baking powder

¼tsp salt

  • Preheat oven to 200c
  • Add eggs and milk to a bowl and whisk to combine. Add oil, spinach, cottage cheese, feta, and herbs and stir to combine.
  • In a separate bowl add all dry ingredients and stir a few times to evenly distribute.
  • Add the wet ingredient to the dry ingredients and stir to combine. The mixture will be lumpy and should drop from a spoon easily. Add a little more milk if mixture seems a little dry.
  • Spoon into a well greased muffin tin
  • OPTIONAL- sprinkle with sesames seeds before adding to the oven
  • Bake for 15mins or until golden brown. Makes 6 large or 8 regular muffins
